Baked French Toast

French Toast 'cuz we love our Daddy!

Over the weekend, my girlfriend made this French Toast for Father’s Day. It was sensational. The other great feature is she made it the night before, so it was simply a matter of popping it in the oven and letting it bake in the morning.

Easy and delicious? All the kids ate it? Left overs that freeze really well? Count me in!

Without further adieu – here it is.

Baked French Toast
1 unsliced challah (egg) bread
6 eggs (if you use egg whites it tends to make it runny)
1 cup of milk (I use skim)
2/3 cups of maple syrup (some like it light I am partial to the real deal – a la Canadienne)
4 tbsp. melted butter (I use 2 tbsp)
2 tsp. vanilla
cinnamon (to your liking)
icing sugar (to your liking)

Cut challah into 6 slices and then cut each slice into quarters. Spray 9×13 pyrex pan with non-stick spray. place challah pieces in pan (6 rows 4 pcs). Mix eggs, milk, maple syrup, melted butter and vanilla. Pour mixture over challlah. Turn challah pieces over to ensure they are moistened on both sides. Sprinkle some cinnamon on top. Cover and refrigerate overnight for best results. Preheat oven at 350 bake for half an hour uncovered. Sprinkle with icing sugar on top or use any fruit to garnish. Leftovers freeze well.
